My “Kinda” Nut Bar
1/2 cups raw pepitas (pumpkin seeds)
¾ cups raw walnuts, chopped
1 cup raw almonds (whole)
2 ½ tablespoons chia seeds
¼ cup maple syrup
¾ cup almond butter
1/8 teaspoon salt
½ teaspoon vanilla extract
Preheat oven to 350 degrees. Place pepitas, walnuts, almonds on a cookie sheet and toast (do not add anything to nuts) for 8-10 minutes, be careful not to burn. When done, put aside to cool.
Meanwhile, ** Line an 8x12 glass baking dish with parchment paper, put aside.
In a small sauce pan, combine maple syrup and almond butter, on low heat as you are stirring until nice and creamy, then stir in salt and vanilla. Then pour into large bowl and add chia seeds and nuts. Stir until completely coated.
Transfer mixture onto **8x12 glass baking dish, pack in mixture until baking dish is full and press evenly. Then place baking dish in freezer for 45 minutes, then let sit for 3 minutes, cut, remove and put in air tight container and put in freezer. When I am ready to eat, I take out of freezer for about 5-10 minutes and eat. Enjoy!
